Am Vorabend des Backtages wird mit Sauerteig der Vorteig angesetzt. Am Backtag wird der Teig unter Zufügung von Wasser und Salz geknetet. Kleine, runde Laibe werden geformt und auf lange Brotbretter gelegt, die zum Tragen dienen. Der Backofen, der mit Holz beheizt wird, befindet sich außerhalb des Hauses. Die Brote werden während des Backens im Ofen umgesetzt. Die fertigen Brotlaibe werden auf ein Hängegestell gelegt, das am Giebelbalken hängt. Aufgenommen mit 16 B/s; Vorführgeschw. 18 B/s.
In the evening before baking leaven is prepared. In the morning dough is kneaded, water and salt are added and the loaves are formed. The oven is heated and the loaves put in. They are shifted during baking, finally taken out and tested.
