Herstellen von Maniokmehl und Maniokfladen bei den Azande, Nordost-Zaire

Bei den Azande wird seit der Kolonialzeit bitterer Maniok angepflanzt. Nach der Ernte werden die Knollen geschält und gewässert. Zum Herstellen von Maniokmehl werden sie in der Sonne getrocknet, in einem Holzmörser zerstampft und gesiebt. Zum Herstellen von Maniokfladen werden die geschälten Knollen im Mörser zerstampft und zum Trocknen in kleinen Portionen an die Hauswand geklatscht. Beide Arten der Maniokverarbeitung führen zu keiner vollständigen Verflüchtigung der entstehenden Blausäure.
Among the Azande, bitter manioc has been planted since colonial times. After the harvest, the tubers are peeled and soaked in water. To prepare manioc flour, they are dried in the sun, ground in a wooden mortar and sieved. To prepare flat manioc cakes, the peeled tubers are ground in mortars and slapped against the wall of the house in small portions to dry. Neither method of manioc processing results in a complete evaporation of the cyanic acid being produced.
