Auf einer Hochalm im Pinzgau wird süße Kuh- und Ziegenmilch im Kessel erhitzt und mit Lab versetzt. Nach Dicklegung wird die Masse gebrochen und verrührt, mit einem Sieb herausgeschöpft und in einem Holzreifen zu einem Käselaib gepreßt. Im Käsekeller wird der Käse mit Salz eingerieben und während des Reifens, das von innen nach außen erfolgt, mehrmals mit Molke oder Wasser gewaschen und gewendet.
On a high alpine pasture in the Pinzgau sweet and new cow's and goat's milk is heated in a vessel and rennet is added. The coagulated mass is then broken into pieces and stirred, taken out with a sieve, placed into a wooden hoop and pressed into the shape of a wheel. In the curing cave the "Pinzgauer cheese" is salted and in the course of the ripening process, which proceeds from the inside to the outside, repeatedly bathed in whey or water and turned.
