Die geseihte Schafmilch wird mit Lab versetzt und die geronnene Masse, nach mehrmaligem Zerschneiden, durch Pressen und Beschweren von der Molke befreit. Der in Stücke geschnittene Käse kommt in Salzwasser, wird dann in Holzbütten gelegt und reihenweise mit Salz bestreut. Wenn keine Molke mehr austritt, werden die Deckel und Reifen der Bütten festgehämmert, und Salzlösung wird nachgefüllt.
The film shows the production of telemea-cheese in an Alpine chalet on a spring Alpine pasture in the Cibin mountains. Rennet is added to the strained milk. The whey is separated from the curdled mass by pressing. The cheese mass, cut into pieces, is put into a salt water solution. After an approximately four hour treatment the pieces of cheese are laid in rows in a wooden vat and each layer is strewn with salt. After about three days the lid is made fast and the vat is filled with salt water up to the brim through an opening in the lid.
